Were the Early Christian Writings Tampered With?

How do we know that the early Christian writings we have today were not tampered with, changing what the early church said?  Did the Roman Catholics change the message of the early Christians to conform to later theological beliefs?  In this CD, Bercot gives several strong arguments for the authenticity of the early Christian writings.  We can be confident that they were not tampered with.
